1 large sweet potato/yam (approx. 2 lbs.)
1 Tbsp. of olive oil
½ tsp. of paprika
1 tsp. of onion powder
½ tsp. of ground black pepper
Preheat oven to 450 degrees.
Cut sweet potato into ¼ inch wide pieces. (Thicker pieces require more baking time.)
In bowl, add sweet potato, olive oil, paprika, onion powder, and black pepper. Mix until sweet potatoes are thoroughly coated.
Place cooling rack on top of baking sheet.
Place sweet potatoes on rack, leaving space between each fry.
Check after 20 minutes. Bake longer, as necessary.
